Glorious Garlic!
April is National Garlic Month! Are you one of those who can’t live without your garlic? Good for garlic1 2you! Medical studies have shown that garlic can lower cholesterol, prevent  blood clots, reduce blood pressure, prevent cancer, and protect against bacterial and fungal infections.

California grows over 90% of the garlic produced in the U.S. And we usually see two or three different varieties of garlic at the market like Italian, spring green, and others. Read more here.

Food for Thought: "If each Californian bought an additional $4.50 in food directly from local farmers each week, farms would earn $8.6 billion of new income (25% increase)"--Ken Meter, Crossroads Resource Center. Listen to his views (3-part series) on building a more sustainable local food economy.

Cookin' the Market - Chef Mario Hernandez

marioPeople are always shocked to hear I’m not so fond of regular garlic. “But you’re a chef!” they say. “It’s super healthy!” they shout! I know, and I get it, but it’s one of those too-much-of-a-good-thing problems. People just over-use it in everything and I tend to like dishes that are balanced (yeah, I’m obnoxious).

But green garlic is different. It’s subtle, it’s coy, it’s perfect. You can use the entire plant, stem and all. Grill it, braise it, make a delicious gratin with it, and use it like you would regular garlic. You just won’t get the stiff punch of regular garlic, but the sweet and quaint flavor of spring. Grilled Green Garlic: Rinse, cut off root tips. Toss with olive oil, salt and pepper, place on a hot grill for a few minutes until greens begin to brown, and voilà! Awesome! Add to grilled vegetables or chop and add to potato salads for flavor.
